  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 tablespoon ketchup
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon black pepper

Instructions

  1. Mix the Marinade: In a bowl, combine soy sauce, pineapple juice, brown sugar, minced garlic, ground ginger, ketchup, rice vinegar, and black pepper. Whisk everything together until the sugar is dissolved and the mixture is well blended.
  2. Marinate the Chicken: Place the chicken thighs in a resealable bag or a shallow dish and pour the marinade over them. Make sure the chicken is well-coated with the marinade.
  3. Let it Soak: Seal the bag or cover the dish and refrigerate for at least 120 minutes, or preferably overnight.
  4. Preheat the Grill: Preheat your grill to medium heat.
  5. Remove and Discard the Marinade: Take the chicken from the marinade, letting any excess drip off. Discard the leftover marinade.
  6. Grill the Chicken: Place the chicken thighs on the grill and cook for 6-8 minutes on each side, until fully cooked.
  7. Serve and Enjoy!: Remove the chicken from the grill, let it rest for a moment, and enjoy.

Notes

For extra flavor, marinate the chicken overnight. If lacking a grill, bake at 400°F (200°C) for 25-30 minutes.
