A vibrant Hawaiian dish featuring grilled chicken marinated in a sweet and savory blend of soy sauce, pineapple juice, and spices.

Ingredients

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 cloves garlic, minced
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 2 green onions, chopped

Instructions

  1. Whisk together soy sauce, ketchup, brown sugar, pineapple juice, garlic, ginger, and black pepper in a bowl.
  2. Marinate chicken thighs in a resealable bag with the marinade for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Grill chicken for about 6-7 minutes on each side or until fully cooked, basting with remaining marinade.
  5. Remove chicken from grill, let it rest for a few minutes, and garnish with chopped green onions before serving.

Notes

Best served with coconut rice or a bright slaw. Can substitute chicken thighs with breasts or use firm tofu for a vegetarian version.
