  • 2 corn tortillas
  • 1 cup refried beans
  • 1/2 cup salsa
  • 1/4 cup avocado, sliced
  • 1/4 cup queso fresco, crumbled
  • Cilantro, for garnish

  • Oil, for frying

Instructions

  1. Heat a small amount of oil in a skillet over medium heat. Fry the corn tortillas until golden and crispy, then set aside.
  2. In the same skillet, crack the eggs and cook them sunny-side up or to your desired doneness.
  3. Warm the refried beans in a small pot or microwave. This quick step adds a comforting layer to your dish.
  4. To assemble, place each tortilla on a plate and spread some refried beans on top, followed by the fried egg.
  5. Spoon salsa over the egg and add slices of avocado for a refreshing twist.
  6. Sprinkle queso fresco on top, garnish with fresh cilantro, and season with salt and pepper to taste.
