A moist and flavorful zucchini bread that combines whole grains and garden-fresh zucchini, perfect for a snack or breakfast.

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a bread loaf pan.
  2. Combine the grated zucchini, sugar, vegetable oil, eggs, and vanilla in a large bowl and mix well.
  3. Whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and ground cinnamon in another bowl.
  4. Mix the dry ingredients into the wet zucchini mixture until just combined. Fold in chopped nuts if desired.
  5. Pour the batter into the prepared loaf pan, smoothing the top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool the zucchini bread in the pan for about 10 minutes before transferring to a wire rack.

Notes

For a richer flavor, substitute half of the granulated sugar with brown sugar. You can also add chocolate chips or dried fruits for variety.
