A comforting and nutritious taco casserole loaded with flavors, perfect for family dinners.

Ingredients

  • 1 pound ground turkey or beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortilla chips (for topping)
  • Chopped cilantro (for garnish, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground turkey or beef over medium heat until fully cooked; drain excess fat.
  3. Add black beans, corn, taco seasoning, and salsa to the skillet, mixing well to combine.
  4. Layer half of the meat mixture, half of the diced tomatoes, and half of the cheese in a greased baking dish.
  5. Repeat the layering process with the remaining ingredients.
  6. Top with crushed tortilla chips and the remaining cheese.
  7. Bake in the preheated oven for 20-25 minutes until cheese is bubbling and golden.
  8. Garnish with chopped cilantro if desired and serve hot.

Notes

This casserole is perfect for leftovers and can be frozen before baking for longer storage.
