A heart-healthy twist on classic Chicken Marsala, featuring tender chicken in a rich mushroom and wine sauce, perfect for any occasion.

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup Marsala wine
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Sear the chicken in a large skillet over medium heat with olive oil for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  3. Sauté the minced garlic and sliced mushrooms in the same skillet until the mushrooms are tender.
  4. Deglaze the pan with Marsala wine and low-sodium chicken broth, scraping up the browned bits.
  5. Simmer the sauce on medium heat for about 5-10 minutes until it reduces slightly.
  6. Return the chicken to the skillet, ensuring it is well-coated with the sauce.
  7. Serve hot, garnished with freshly chopped parsley.

Notes

For extra flavor, marinate the chicken in Marsala wine for an hour before cooking. Serve with Parmesan cheese for added richness.
