Quick and easy Healthy Chicken Fajitas made with colorful vegetables and zesty lime, perfect for a satisfying weeknight dinner.

  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Tortillas (flour or corn)
  • Lime wedges (for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add sliced chicken breast to the skillet and season with fajita seasoning, salt, and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  3. Stir in the sliced bell pepper and onion to the skillet. Sauté until the vegetables are softened and slightly charred, around 5 minutes more.
  4. Serve the sizzling chicken and veggie mix in warm tortillas, garnished with lime wedges on the side.
