Delicious and nutritious blueberry muffins made with whole grains and fresh blueberries.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/2 cup Greek yogurt
  • 1/2 cup almond milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh blueberries
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the whole wheat flour, oats, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the honey (or maple syrup), Greek yogurt, almond milk, vanilla extract, and egg in another bowl until smooth.
  4. Mix the wet ingredients into the dry ingredients until just combined, then gently fold in the blueberries.
  5. Fill the muffin cups with batter, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool the muffins for a few minutes before transferring them to a wire rack.

Notes

For added flavor, pair muffins with Greek yogurt or fresh fruit.
