A delightful quiche with a crispy hash brown crust and a creamy, savory filling packed with vegetables.

Ingredients

  • 2 cups shredded hash browns
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large eggs
  • 1 cup milk
  • 1 cup chopped vegetables (e.g., bell peppers, onions, spinach)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine shredded hash browns with a pinch of salt and pepper in a mixing bowl.
  3. Press the mixture into the bottom and up the sides of a greased pie dish to form a crust.
  4. Bake the hash brown crust for about 25 minutes or until golden brown.
  5. Whisk together the eggs and milk in another bowl.
  6. Add in the chopped vegetables and half of the cheese, mixing until well combined.
  7. Pour the egg mixture into the baked hash brown crust.
  8. Sprinkle the remaining cheese on top.
  9. Bake for an additional 25-30 minutes or until the quiche is set and lightly browned.
  10. Allow to cool for a few minutes before slicing and serving.

Notes

Use frozen hash browns for a crispy crust. Feel free to mix up the veggies and cheese for variations.
