Ingredients

  • Zucchini
  • Bell peppers (mixed colors)
  • Eggplant
  • Red onion
  • Olive oil
  • Salt
  • Pepper
  • Balsamic vinegar
  • Fresh basil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prepare the vegetables by cutting them into bite-sized pieces.
  3. Season the vegetables with olive oil, salt, and pepper.
  4. Grill the vegetables for about 5-7 minutes, turning occasionally.
