Delicious grilled steak fajitas with marinated flank steak, smoky vegetables, and warm tortillas, perfect for gatherings.

Ingredients

  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 8 small flour tortillas
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Marinate the flank steak in a blend of olive oil, lime juice, chili powder, cumin, salt, and pepper for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Grill the marinated flank steak for about 5-7 minutes on each side.
  4. Rest the steak for a few minutes after grilling.
  5. Sauté the sliced bell pepper and onion until softened and caramelized.
  6. Slice the rested steak against the grain into thin strips.
  7. Assemble the grilled steak and sautéed vegetables in warm flour tortillas and garnish with fresh cilantro and lime wedges.

Notes

For extra flavor, marinate the steak longer. Substitute flank steak with skirt steak or chicken if desired.
