A vibrant and flavorful salad featuring grilled halloumi, mixed greens, and fresh vegetables, perfect for summer evenings.

Ingredients

  • 200g halloumi cheese
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or grill pan over medium-high heat to ensure a beautifully charred finish.
  2. Slice the halloumi into thick slices, about 1/2 inch.
  3. Grill the halloumi slices for about 2-3 minutes on each side until golden brown and crispy.
  4. Prepare the salad by combining the salad greens, halved cherry tomatoes, cucumber slices, and thinly sliced red onion in a large bowl.
  5. Dress the salad with olive oil and lemon juice, tossing well and seasoning with salt and pepper.
  6. Top the salad with the grilled halloumi slices.
  7. Serve immediately and enjoy the delightful flavors!
