A refreshing salad featuring grilled halloumi cheese, fresh greens, and a zesty lemon dressing, perfect for summer evenings.

Ingredients

  • 200g halloumi cheese
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the halloumi cheese into thick slices, about half an inch thick.
  3. Grill the halloumi slices for 2-3 minutes on each side until golden brown.
  4. Prepare the salad by combining salad greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  5. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  6. Dress the salad with the lemon dressing and toss to combine gently.
  7. Assemble the salad by topping it with the grilled halloumi slices.
  8. Garnish with fresh herbs, if desired, and serve immediately.
