A dessert that combines the sweetness of grilled pineapple with the richness of vanilla ice cream, creating a symphony of textures and flavors. The magic happens when the hot pineapple hits the cold scoop, creating a pool of melted creaminess with a dash of spiced syrup.

Ingredients

Scale

1 large ripe pineapple, peeled, cored, and cut into 8 spears or 1/2-inch thick rings
2 tablespoons unsalted butter, melted
2 tablespoons brown sugar (light or dark)
1/2 teaspoon ground cinnamon
Pinch of sea salt
Optional: 1 tablespoon dark rum or bourbon (for brushing at the end)
1 pint (2 cups) good quality vanilla bean ice cream
1/4 cup toasted coconut flakes (sweetened or unsweetened)
1/4 cup roughly chopped salted macadamia nuts or pecans
2 tablespoons caramel sauce (store-bought or homemade), warmed slightly
Flaky sea salt, for finishing (like Maldon)

Instructions

Prep the pineapple and fire up the grill by peeling and coring the pineapple into 8 spears or 1/2-inch thick rings. Pat dry with paper towels. Preheat your grill to medium-high heat (about 400-450°F).
Create the sweet and spicy glaze by whisking together the melted butter, brown sugar, ground cinnamon, and a pinch of sea salt until the sugar is mostly dissolved.
Place the pineapple pieces directly on the hot grill grates. Brush the tops generously with the butter-sugar glaze. Let them cook undisturbed for 2-3 minutes.
For the sundae assembly, add the vanilla ice cream, toasted coconut flakes, chopped macadamia nuts, and the warmed caramel sauce. Sprinkle with flaky sea salt for finishing. Serve immediately.
