A refreshing Grilled Asparagus Salad with creamy Parmesan and tart lemon, perfect for summer gatherings.

Ingredients

  • 1 lb Fresh asparagus
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Lemon juice
  • 1/2 cup Parmesan cheese, shredded
  • 1 cup Cherry tomatoes, halved
  • 4 cups Mixed greens

Instructions

  1. Preheat the grill to medium-high heat.
  2. Trim the ends of the fresh asparagus to remove any tough, woody bits. Toss them in olive oil, salt, and pepper.
  3. Place the asparagus on the grill and cook for about 5-7 minutes, turning occasionally.
  4. Combine the mixed greens and sliced cherry tomatoes in a large bowl. Add the grilled asparagus and mix gently.
  5. Drizzle with lemon juice and sprinkle with Parmesan cheese, then serve immediately.
