A refreshing and creamy egg salad made with Greek yogurt, perfect for a light lunch or snack.

Ingredients

  • 6 hard-boiled eggs
  • 1/2 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup chopped celery
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Paprika for garnish (optional)

Instructions

  1. Chop the hard-boiled eggs into small pieces.
  2. Whisk together the Greek yogurt, Dijon mustard, and lemon juice in a mixing bowl.
  3. Fold in the chopped eggs, celery, and green onions.
  4. Combine all ingredients until well mixed.
  5. Season with salt and pepper to taste.
  6. Serve on bread, crackers, or greens, garnished with paprika if desired.

Notes

Can substitute the Greek yogurt for regular yogurt, but Greek provides a better texture and flavor. Allow chilling for 30 minutes for enhanced flavor.
