A vibrant and nutritious Greek Salmon Bowl packed with flavors of the Mediterranean, featuring grilled salmon, quinoa, and fresh vegetables.

Ingredients

  • 2 salmon fillets
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. Season the salmon fillets with olive oil, lemon juice, salt, and pepper.
  3. Grill or bake the salmon for about 5-6 minutes per side.
  4. Combine the cooked quinoa, halved cherry tomatoes, diced cucumber, thinly sliced red onion, crumbled feta cheese, and sliced olives in a large bowl.
  5. Drizzle the salad with olive oil and additional lemon juice, tossing to coat.
  6. Serve the grilled salmon on top of the salad, garnishing with fresh parsley.

Notes

Store leftovers separately in airtight containers; salmon stays fresh for up to two days, salad ideally consumed within 24 hours.
