A vibrant Greek Pasta Salad featuring fresh vegetables, Kalamata olives, and creamy feta, perfect for summer gatherings.

Ingredients

  • 8 ounces of pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and let cool.
  2. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, red onion, bell pepper, Kalamata olives, and crumbled feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper until well combined.
  4. Pour the dressing over the pasta salad and toss gently to combine all the ingredients.
  5. Serve it chilled or at room temperature.

Notes

Allow the pasta salad to sit for about 30 minutes after tossing in the dressing for the best flavor.
