- 1 lb ground beef or lamb
- 1 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tbsp fresh oregano, chopped
- Salt and pepper to taste
- 2 cups potatoes, diced
- 2 tbsp olive oil
- 1 cup yogurt
- 1 cucumber, grated
- 2 tbsp lemon juice
- 1/2 tsp salt
Instructions
- Preheat your oven to 400°F (200°C).
- Combine ground beef or lamb, breadcrumbs, egg, minced garlic, chopped parsley, chopped oregano, salt, and pepper in a bowl. Mix well and form into meatballs.
- Toss diced potatoes with olive oil, salt, and pepper in a baking dish. Spread them out and place the meatballs on top.
- Bake for 25-30 minutes until meatballs are cooked through and golden brown, and potatoes are crispy.
- Mix yogurt, grated cucumber, lemon juice, and salt in a bowl to prepare the tzatziki sauce.
- Serve the meatballs and potatoes in bowls, drizzling tzatziki sauce on top.
Notes
Leftovers can be stored in the refrigerator for up to 3 days. To maintain crisp texture, reheat in the oven.
