A comforting and delicious Falafel Bowl filled with crunchy falafel, fresh greens, and vibrant toppings.

Ingredients

  • 1 cup dried chickpeas (or 1 can, drained and rinsed)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 1/4 teaspoon baking soda
  • Oil for frying
  • Pita bread or salad greens, for serving
  • Toppings (e.g., cucumber, tomato, tahini sauce, or yogurt)

Instructions

  1. Soak the chickpeas. If using dried chickpeas, soak them in water overnight. Drain and rinse before using.
  2. Combine the ingredients. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper. Pulse until a coarse mixture forms.
  3. Shape the falafel. With damp hands, shape the mixture into small balls or patties, about 1-2 inches in diameter.
  4. Fry the falafel. Heat oil in a pan over medium heat and fry the falafel until golden brown on both sides, roughly about 3-4 minutes per side.
  5. Serve the falafel. Serve the falafel hot in pita bread or over salad greens, topped with your choice of vegetables and sauces like tahini or yogurt.

Notes

If short on time, canned chickpeas work. Adjust herbs to taste and don’t skip the baking soda for fluffiness.
