A light and nutritious frittata loaded with colorful veggies, perfect for breakfast or any meal.

Ingredients

  • 8 egg whites
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/2 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk the egg whites until frothy.
  3. Heat up a splash of olive oil in a skillet over medium heat.
  4. Sauté the diced onion and bell pepper until softened.
  5. Add the chopped spinach and halved cherry tomatoes, cooking until the spinach wilts.
  6. Pour the whisked egg whites over the sautéed vegetables and season with salt and pepper.
  7. Allow the mixture to cook on the stove for 2-3 minutes until edges start to set.
  8. Transfer the skillet to the oven and bake for 12-15 minutes until set and lightly browned.
  9. Let it cool slightly before slicing and serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
