  • 3/4 cup milk
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter
  • Powdered sugar (for serving)
  • Lemon wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together eggs, milk, flour, salt, and vanilla until smooth.
  3. Place a cast-iron skillet in the oven and melt the butter in it.
  4. Pour the batter into the hot skillet.
  5. Bake for 20-25 minutes until puffed and golden brown.
  6. Serve immediately, dusted with powdered sugar and a squeeze of lemon.

Notes

For best results, use a hot skillet and do not overmix the batter. Enjoy fresh for the best flavor.
