Ingredients

  • 6 hard-boiled eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • Paprika for garnish
  • Chives (optional)

Instructions

  1. Peel and slice the eggs in half lengthwise.
  2. Remove the yolks and place them in a bowl.
  3. Mash the yolks with mayonnaise, mustard, salt, and pepper until smooth.
  4. Spoon or pipe the yolk mixture back into the egg whites.
  5. Sprinkle with paprika and chives if desired.
  6. Serve chilled.

Notes

For easy peeling, use eggs that are a few days old. You can also prepare the yolk mixture a day in advance.
