A vibrant mix of black beans, corn, and colorful veggies, perfect as a dip or side dish.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1/2 cup diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, finely minced (optional)
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Gather your ingredients.
  2. Combine the black beans, corn, tomatoes, bell peppers, red onion, cilantro, and jalapeño in a large bowl.
  3. Whisk together the lime juice, olive oil, salt, and pepper in a small bowl.
  4. Dress the bean mixture with the dressing and toss gently.
  5. Let the Cowboy Caviar rest for at least 30 minutes.
  6. Serve with tortilla chips or as a side dish.

Notes

For added creaminess, consider adding avocado slices. This dish can also be made a day ahead without the avocado to maintain freshness.
