A creamy and crunchy macaroni salad that’s perfect for summer gatherings and potlucks.

Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/4 cup sweet pickle relish
  • 1 tablespoon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions; drain and rinse with cold water.
  2. Combine the mayonnaise, diced celery, bell pepper, onion, sweet pickle relish, mustard, and season with salt and pepper in a large bowl.
  3. Add the cooled macaroni to the dressing mixture and stir until well combined.
  4. Refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

Pairs well with grilled meats. Store leftovers in the refrigerator for up to 3 days.
