  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 3/4 cup milk
  • 1 pound breakfast sausage
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups milk (for gravy)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the cold, cubed butter until the mixture resembles coarse crumbs. Stir in the milk gently until just combined.
  2. Turn the dough out onto a floured surface and knead it gently. Pat the dough into a 1-inch thick round and use a biscuit cutter to cut out your biscuits. Place them on a baking sheet, ensuring they’re spaced appropriately for even baking.
  3. Bake in the preheated oven for 12-15 minutes or until golden brown.
  4. While the biscuits are baking, grab a skillet and cook the sausage over medium heat until browned, about 5-7 minutes.
  5. Sprinkle in the additional 1/4 cup of flour and stir to coat the sausage thoroughly. Gradually add in the milk, stirring constantly until the gravy thickens. Season it generously with salt and pepper.
  6. To serve, split the biscuits in half and ladle the sausage gravy over the top of each.
