4 large potatoes, peeled and cut into chunks
2 cups beef broth
1 onion, chopped
4 cloves garlic, minced
2 carrots, sliced
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon rosemary
2 tablespoons olive oil
Instructions
Heat the olive oil in a skillet over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the skillet on all sides until browned.
Place the chopped onion, garlic, potatoes, and carrots at the bottom of the slow cooker.
Add the seared chuck roast on top of the vegetables.
