A quick and satisfying Chickpea Salad Sandwich, perfect for picnics or casual gatherings with friends.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup mayonnaise or vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Bread of choice
  • Lettuce or other greens (optional)

Instructions

  1. Mash the chickpeas in a mixing bowl with a fork or potato masher until slightly chunky.
  2. Add celery, red onion, mayonnaise, Dijon mustard, and lemon juice to the mashed chickpeas.
  3. Mix well until everything is evenly combined, then season with salt and pepper to taste.
  4. Assemble your sandwich by serving the chickpea mixture on your choice of bread, adding greens if desired.

Notes
