A comforting Chicken Tikka Masala that brings warmth and flavors reminiscent of Indian cuisine.

Ingredients

  • 500g chicken breast, diced
  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons tikka masala powder
  • 1 can diced tomatoes
  • 1 cup coconut milk
  • Salt to taste
  • Fresh coriander for garnish

Instructions

  1. Marinate the chicken by combining it with yogurt, garlic, ginger, and tikka masala powder. Refrigerate for at least 1 hour.
  2. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and cook until translucent.
  3. Add the marinated chicken to the pan and brown it on all sides for about 5 to 7 minutes.
  4. Stir in the diced tomatoes and pour in the coconut milk. Mix thoroughly and let it simmer for about 20 minutes on low heat.
  5. Add salt to taste to enhance the flavors.
  6. Garnish with freshly chopped coriander and serve hot.

Notes

For a vegetarian version, substitute chicken with chickpeas or paneer. Use light coconut milk for a lighter dish.
