Delicious Chicken Quesadillas filled with melty cheese, seasoned chicken, and sautéed vegetables for a perfect meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Sauté the sliced bell peppers and onions until soft, about 5-7 minutes.
  3. Combine the shredded chicken with cumin, salt, and pepper in a mixing bowl.
  4. Lay a tortilla in the skillet, add cheese, seasoned chicken, and more cheese on one half.
  5. Fold the tortilla and cook until golden brown and crisp on both sides, about 3-4 minutes per side.
  6. Remove from skillet, cut into wedges, and serve warm with salsa or guacamole.

Notes

For extra crispiness, use more olive oil while cooking. Also, consider using different cheeses or adding vegetables for variations.
