  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken breasts generously with salt and pepper. Coat each breast in flour, shaking off the excess.
  2. Sauté the chicken in olive oil and butter over medium-high heat until golden brown, about 4-5 minutes per side.
  3. Set aside the chicken to let juices settle.
  4. Create the sauce by adding chicken broth, lemon juice, and capers to the skillet; bring to a gentle simmer.
