A comforting dish of tender chicken in a rich, savory sauce with mushrooms and Madeira wine.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 4 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (for thickening)
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Sear the chicken in a large skillet with olive oil until browned and cooked through, about 6-7 minutes per side.
  3. Sauté the sliced mushrooms in the same skillet until browned and juices are released.
  4. Deglaze with Madeira wine and chicken broth, scraping up flavorful bits from the skillet.
  5. Thicken the sauce by adding cornstarch mixed with water, stirring until desired consistency is reached.
  6. Reintroduce the chicken to the skillet and allow it to soak up the sauce for a few minutes.
  7. Garnish and serve hot with fresh parsley.

Notes

Chicken Madeira pairs well with creamy mashed potatoes or buttery noodles. Store leftovers in an airtight container for up to 3 days.
