A healthy and delicious alternative to traditional potato salad, incorporating cauliflower for a delightful texture.

Ingredients

  • 1 head of cauliflower, chopped
  • 2 large potatoes, peeled and diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the potatoes in salted boiling water until tender, about 10-15 minutes. Drain and let cool.
  2. Cook the cauliflower in the same pot for 5-7 minutes until tender. Drain and cool.
  3. Mix the mayonnaise, Dijon mustard, red onion, celery, salt, and pepper in a large bowl.
  4. Combine the cooled potatoes and cauliflower with the dressing, folding gently to maintain texture.
  5. Garnish with fresh parsley and serve.

Notes

For best results, prepare a day in advance and allow flavors to meld. Great for meal prep and summer gatherings.
