A vibrant and fresh Caprese Pasta Salad that celebrates summer flavors with juicy tomatoes, creamy mozzarella, and fragrant basil.

Ingredients

  • 8 oz pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and cook the pasta according to package instructions until al dente. Then, drain and set it aside to cool.
  2. In a large bowl, gently mix together the cooled pasta, halved cherry tomatoes, mozzarella balls, and fragrant basil leaves.
  3. Drizzle the mixture with olive oil and balsamic vinegar.
  4. Season with salt and pepper to your liking.
  5. Gently toss all the ingredients together, taking care not to squish the mozzarella. Serve it immediately or let it chill in the refrigerator until you’re ready to enjoy.

Notes

This salad pairs perfectly with grilled chicken or fish and can be prepared a few hours in advance. Keep the dressing separate until serving to prevent sogginess.
