A delightful fusion of succulent chicken, vibrant tomatoes, and creamy mozzarella, making for a perfect weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella cheese, sliced
  • 1 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the chicken: In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook in the skillet for about 5-7 minutes on each side until golden brown.
  3. Assemble in a baking dish: Place the chicken in a baking dish. Top each piece with sliced mozzarella and halved cherry tomatoes.
  4. Drizzle balsamic vinegar over the top and scatter fresh basil leaves around.
  5. Bake for 20-25 minutes or until the chicken is cooked through and the cheese is melted.
