A delicious breakfast burrito filled with scrambled eggs, sautéed vegetables, black beans, and cheese, perfect for a comforting morning meal.

Ingredients

  • 4 large flour tortillas
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup diced potatoes
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Salt and pepper to taste
  • Salsa and avocado for serving

Instructions

  1. Sauté the potatoes until golden and tender. Set aside.
  2. Whisk together the eggs and milk; season with salt and pepper.
  3. Sauté the onions and bell peppers until soft, then pour in the egg mixture and scramble until just set.
  4. Add black beans and cooked potatoes to the eggs, mixing well.
