Ingredients

  • 1 small head green cabbage, thinly sliced
  • 1 small head red cabbage, thinly sliced
  • 2 medium carrots, grated
  • 1 small onion, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Slice and grate the vegetables in a large bowl: combine green and red cabbage, grated carrots, and thinly sliced onion.
  2. Whisk together the dressing in a separate bowl: apple cider vinegar, olive oil, sugar, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss to coat every piece.
  4. Let the slaw rest for at least 30 minutes before serving to allow flavors to meld.

Notes

For extra crunch, add chopped nuts or sunflower seeds just before serving. Refrigerate leftovers for up to 3 days.
