A vibrant salad that combines roasted cauliflower coated in spicy buffalo sauce with fresh mixed greens and colorful vegetables.

  • 1 head of cauliflower, cut into florets
  • 1 cup buffalo sauce
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 cups mixed greens (lettuce, spinach, etc.)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup blue cheese (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cauliflower florets with olive oil, buffalo sauce, garlic powder, salt, and pepper in a large bowl.
  3. Spread the cauliflower mixture on a baking sheet in a single layer.
  4. Bake for 20-25 minutes, or until the cauliflower is tender and crispy.
  5. Combine the mixed greens, cherry tomatoes, and red onion in a salad bowl.
  6. Cool the cauliflower slightly before adding it to the salad.
  7. Toss the salad and top with blue cheese if desired.
  8. Serve immediately for the best flavor and texture.

Notes

For a vegan version, swap blue cheese for a plant-based alternative.
