  • 1 cup diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper, then drizzle with olive oil.
  3. Combine diced tomatoes, chopped basil, minced garlic, and balsamic vinegar in a bowl.
  4. Place the seasoned chicken in a baking dish and top with the tomato mixture.
  5. Sprinkle mozzarella cheese over the chicken breasts.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the cheese is golden.
  7. Serve warm.

Notes
