Start your day with crispy breakfast quesadillas filled with eggs, cheese, and savory meats, providing a delightful combination of flavors and textures.

Ingredients

  • 4 flour tortillas
  • 4 eggs
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked and crumbled bacon or sausage
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Cooking spray or oil for the pan

Instructions

  1. Heat the skillet with a little oil over medium heat.
  2. Whisk the eggs in a bowl, seasoning with salt and pepper.
  3. Pour the eggs into the skillet and scramble until fully cooked (about 3-4 minutes).
  4. Remove the eggs from the skillet and set aside.
  5. Place one tortilla in the skillet and sprinkle half of the cheese over it.
  6. Add the scrambled eggs, cooked bacon or sausage, bell peppers, and onions on top of the cheese.
  7. Sprinkle the remaining cheese and cover with a second tortilla.
  8. Cook for about 2-3 minutes, then carefully flip the quesadilla and cook until golden brown and cheese is melted.
  9. Remove from the skillet, slice into wedges, and serve hot.

Notes

Pair with salsa or sour cream. Store leftovers in an airtight container in the fridge for up to 3 days.
