A simple yet satisfying breakfast quesadilla with a crispy outside and gooey cheesy center.

Ingredients

  • 2 tortillas
  • 2 eggs
  • 1/2 cup cheese (cheddar or your choice)
  • 1/4 cup cooked bacon or sausage (optional)
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • Salt and pepper to taste
  • Sour cream or salsa for serving (optional)

Instructions

  1. Scramble the eggs in a skillet and season with salt and pepper.
  2. Preheat another skillet over medium heat.
  3. Assemble one tortilla in the skillet, sprinkling half of the cheese on one half.
  4. Spoon the egg mixture on top of the cheese, then sprinkle the remaining cheese on top.
  5. Fold the tortilla over to seal in all the flavors.
  6. Cook for 2-3 minutes on each side until golden brown and cheese is melted.
  7. Slice into wedges and serve with sour cream or salsa.
