Delicious, fluffy blueberry muffins perfect for breakfast or a snack, bursting with juicy blueberries.

Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the milk, vegetable oil, egg, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the blueberries gently to avoid crushing them.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before serving.
