Light and fluffy muffins bursting with fresh blueberries and zesty lemon flavors, perfect for breakfast or an afternoon snack.

Ingredients

  • 1 cup fresh blueberries
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, egg, lemon juice, and lemon zest.
  4. Pour the wet mixture into the bowl with the dry ingredients and stir gently until just combined.
  5. Gently fold in the fresh blueberries.
  6. Grease your muffin tin or line it with muffin liners.
  7. Scoop the batter into each muffin cup, filling them about 2/3 full.
  8. Slide the muffin tin into the oven and bake for 20-25 minutes.
  9. Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack.

Notes

For extra flavor, feel free to add a splash of vanilla extract or chopped nuts.
