Delightful blueberry crumble bars that are easy to make and perfect for snacks or desserts during summer gatherings.

  • 2 cups fresh blueberries
  • 1 cup flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking pan, preparing it for the base that will soon fill with deliciousness.
  2. In a mixing bowl, combine the flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Give it a good stir, allowing the flavors to meld together.
  3. Add the softened butter to the mixture and mix until crumbly. You want it to resemble wet sand. Remember to reserve 1 cup of this mixture for the topping!
  4. Press the remaining mixture firmly into the bottom of the prepared pan. This will form the sturdy base for your blueberry filling.
  5. In another bowl, gently mix the fresh blueberries with the lemon juice and vanilla extract.
  6. Spread the blueberries evenly over the crust, ensuring every corner is well-covered.
  7. Sprinkle the reserved crumbly mixture over the top of the blueberries.
  8. Bake for 30-35 minutes or until the topping is golden brown.
  9. Allow the bars to cool completely in the pan before cutting them into squares.

Notes
