A comforting Blueberry Cream Cheese French Toast Bake, perfect for lazy Sunday mornings, filled with soft custardy bread and juicy blueberries.

  • 6 slices of bread (preferably brioche or challah)
  • 8 oz cream cheese, softened
  • 1 cup fresh blueberries
  • 4 large eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Butter for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
  2. Cut the bread into cubes and layer half of it in the bottom of the dish.
  3. In a bowl, mix the softened cream cheese and sugar until smooth; then spread it over the bread.
  4. Sprinkle the fresh blueberries over the cream cheese mixture and top with the remaining bread cubes.
  5. In another bowl, whisk together the eggs, milk, vanilla extract, and cinnamon; then pour it over the bread layers in the dish.
  6. Let it sit for 15-30 minutes for the bread to soak up the mixture.
  7. Bake in the preheated oven for 30-35 minutes, until golden brown.
  8. Serve warm, optionally topped with syrup or powdered sugar.

Notes

For added flavor, consider using stale bread or adding a squeeze of lemon juice over the blueberries.
