These Black Bean Burgers are a flavorful meat alternative, combining black beans, spices, and corn for a satisfying and versatile dish.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup diced onion
  • 1/4 cup corn
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 egg (or flax egg for vegan)
  • Burger buns
  • Toppings (lettuce, tomato, avocado, etc.)

Instructions

  1. Mash the black beans in a mixing bowl until mostly smooth.
  2. Stir in the breadcrumbs, diced onion, corn, minced garlic, cumin, chili powder, salt, pepper, and egg (or flax egg) to combine.
  3. With clean hands, shape the mixture into patties.
  4. Heat a skillet over medium heat and add a little oil.
  5. Cook the patties for 4-5 minutes on each side.
  6. Serve the patties on burger buns with desired toppings.

Notes

Allow patties to rest after cooking to set their shape.
