A cherished recipe for birria tacos featuring tender beef infused with rich spices, perfect for family gatherings.

Ingredients

  • 2 lbs beef (chuck or brisket)
  • 23 dried guajillo chiles
  • 23 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • 1/2 tsp cinnamon
  • 4 cups beef broth
  • Salt to taste
  • Corn tortillas
  • Chopped onions, cilantro, and lime for serving

Instructions

  1. Soften the chiles by soaking them in hot water until softened, about 15 minutes.
  2. Blend the softened chiles, garlic, chopped onion, cumin, oregano, black pepper, cinnamon, and a splash of beef broth in a blender until smooth.
  3. Sear the beef in a large pot with a drizzle of oil until browned on all sides.
  4. Combine the blended sauce with the browned beef and the remaining beef broth. Simmer on low for 2-3 hours until the beef is fork-tender.
  5. Shred the tender beef with forks and serve in warm corn tortillas topped with chopped onions, fresh cilantro, and lime juice.

Notes

Store leftovers in an airtight container for up to 3 days. Marinate the beef in the blended sauce overnight for extra flavor.
