A crispy, batter-fried cauliflower dish drizzled in a spicy, creamy sauce, perfect as an appetizer or party snack.

Ingredients

  • 1 head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 cup sparkling water
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • Chopped green onions for garnish

Instructions

  1. Prepare the Batter: In a large bowl, whisk together the flour, garlic powder, paprika, salt, and pepper. Gradually add the sparkling water until the batter is smooth.
  2. Heat the Oil: In a deep pan, heat the vegetable oil over medium heat until ready.
  3. Fry the Cauliflower: Dip each cauliflower floret into the batter, let the excess drip off, and fry until golden brown, about 5-7 minutes.
  4. Whisk Together the Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, and sriracha.
  5. Toss & Garnish: Toss the hot cauliflower florets in the sauce until coated, then serve with chopped green onions on top.

Notes

For extra crunch, dust florets with cornstarch before battering. You can bake the florets for a healthier version at 425°F (220°C) for about 25 minutes.
