  • 1/4 cup melted butter
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 ripe bananas, mashed
  • 1 cup banana pudding mix
  • 1 cup whipped cream
  • Sliced bananas and additional wafers for garnish

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Create the crust by combining crushed vanilla wafers and melted butter.
  3. Press the mixture firmly into the bottom of a springform pan.
  4. Mix the softened cream cheese, sugar, and vanilla extract until smooth.
  5. Incorporate the eggs one at a time, mixing well after each addition.
  6. Add the mashed bananas and banana pudding mix, stirring until well combined.
  7. Assemble the cheesecake by pouring the banana mixture over the crust.
  8. Bake for 60-70 minutes, or until the center is set.
  9. Cool to room temperature, then refrigerate for at least 4 hours.
  10. Garnish with whipped cream, sliced bananas, and additional wafers before serving.

Notes

Use very ripe bananas for maximum flavor and softness. Do not skip the chilling step; it ensures the cheesecake sets properly.
