Delightfully soft and fluffy banana muffins with a crunchy crumb topping, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin to ensure your muffins don’t stick.
  2. Mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the baking soda and salt, followed by sugar, the egg, and vanilla extract. Stir until well combined.
  4. Add the flour gently until just incorporated.
  5. Create the crumb topping by combining brown sugar, oats, and chopped nuts.
  6. Fill the muffin tins about 2/3 full with the batter and sprinkle the crumb topping over each muffin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the muffins cool before serving.

Notes

Store in an airtight container for up to 3 days or freeze for up to 3 months. Thaw before reheating.
